A baking challenge – Roo’s first birthday. I was determined I was baking it myself! So I bought the “Topsy Turvy” cake tin – illusion of 3 crooked layers – I had to make 2 cakes and split them to make the cake deep enough.
After 1lb of butter and a whole bag of icing sugar, my own butter icing wasn’t working so a frantic trip to Superquinn was needed to pick up Betty Crocker’s fabulous vanilla frosting and it filled the layers and all around the outside.
The cake itself was marbled chocolate and vanilla sponge and the blue came from a genius invention – spray food colouring !!!
It took me ALL day (and let me just say – flowers are MUCH easier to work with!! but I was delighted and the best compliment – not one bit was left !! Everyone had some on the day and were looking for seconds to bring home and at 10pm myself and friends sat around the last remaining bit with a fork each and dived in !!
